What's the best non-degradable melee gear that's out there? Ring, Gloves, amulet, boots, legs, cape, body, helmet, etc etc.

Best non degradable would be 3a + comp cape + steadfast boots + onyx ring (i) + dragonfire shield and fury amulet.
Full dragon (platebody, full helm and legs/skirt might be cheaper)

Depends what bonus you are looking for.

Strength: Helm of Neitzinot, Bandos chestplate, Bandos tassets, Amulet of Fury, Beserker ring(i), Steadfast boots, Dragon defender/Dragonfire shield, Completionist cape, Barrows gloves(RfD).

Slash Defence: Third age full helmet, Third age platebody, Third age platelegs, Amulet of Fury, Warrior ring(i), Dragonfire shield, Completionist cape, Barrows gloves(RfD), and Steadfast boots.

This is the general best melee defence overall.  Some different combinations can raise and lower some stats.

Stab defence: Third age full helmet, Dragon platebody, Third age platelegs, Dragonfire shield, Onyx ring(i), Barrows gloves(RfD), Completionist cape, Amulet of Fury, Steadfast boots.

Crush defence: Third age full helmet, Third age platebody, Third age platelegs, Divine spirit shield, Berserker ring(i), Barrows gloves(RfD), Completionist cape, Amulet of Fury, Steadfast boots.

Ranged defence: Third age full helmet, Bandos chestplate, Bandos tassets, Dragonfire shield, Onyx ring(i), Barrows gloves(RfD), Completionist cape, Amulet of Fury, Steadfast boots.

Magic defence: Armadyl helm, Armadyl chestplate, Armadyl chainskirt, Spectral spirit shield, Seers' ring(i), Ragefire boots, Completionist cape, Amulet of Fury.

Slash Attack: Fighter hat, Steadfast boots, Amulet of Fury, Warrior ring(i), Dragon defender, Completionist cape, Barrows gloves(RfD).

Stab attack: Fighter hat, Steadfast boots, Amulet of Fury, Onyx ring(i), Dragon Defender, Completionist cape, Barrows gloves(RfD).

Crush attack: Dwarven helmet, Steadfast boots, Amulet of Fury, Onyx ring(i), Dragon defender, Completionist cape, Barrows gloves(RfD).

Yet Gano degrades.  This is best NON degradeable lists.

In my opinion bandos can be semi-versatile due to the str/prayer bonus. I use it for most things, but of course depending on what it is I do switch.

Bandos no doubt, Theres not many monsters and stuff that need higher defence than bandos and it gives the best Strength bonus for non-degradeable armour.
